The fruit we get from Eola Springs Vineyards at the southern end of the Eola-Amity Hills comes from non-grafted 30-year old vines. This vineyard has a great south-facing exposure and a slope from top to bottom resulting in an ideal mix of air movement and heat for slow ripening. This wine is made from the Wadenswil, Dijon 115, and Dijon 667 clones. We used native yeasts for fermentation and aged the wine in neutral French oak barrels.
This wine is elegant from start to finish. Visually this wine is on the lighter side with a translucent rim. On the nose, there is raspberry, freshness, and wet stone. Those flavors carry over to the palate adding herbaceous flavors including crushed fresh oregano. This wine has a long and complex finish with medium acid and soft tannins.
